Five-Minute Cottage Cheese Queso

A warm, smooth cheese dip made in the microwave from blended cottage cheese, cheddar, taco seasoning and tomatoes with green chiles.

About 2 cupsYield

What you'll need

  • 1.5 cups cottage cheese
  • 0.5 cup shredded cheddar or Mexican-blend cheese, plus a little for the top
  • 1 tablespoon taco seasoning
  • 0.5 cup diced tomatoes with green chiles, drained (about half a 10-ounce can)
  • 1 tablespoon milk, plus another if needed

How to make it

  1. Blend the cottage cheese, 1/2 cup of the shredded cheese and the taco seasoning until smooth.

  2. Scrape it into a microwave-safe bowl and microwave 1 minute. Stir, then keep heating in 30-second bursts, stirring each time, until hot and melted, about 2 minutes in all.

  3. Stir in the tomatoes and chiles, loosen with a little milk if it is thick, sprinkle more cheese on top and microwave 30 seconds more.

  4. Serve warm with tortilla chips and cut vegetables.
