Gilded Dark Apple
A fairy-tale apple in a glass, and nobody has to miss out. Cider gives the body, pomegranate turns it a dark red, lemon keeps it sharp, and a pinch of edible shimmer makes it move when you swirl the glass. It is drier than it looks.
What you'll need
- 3 oz apple cider (90 ml)
- 1.5 oz pomegranate juice (45 ml)
- 0.5 oz fresh lemon juice (15 ml)
- 1 teaspoon maple syrup (5 ml)
- 1 pinch edible gold shimmer dust (labelled edible)
- 2 oz plain sparkling water, chilled (60 ml)
- 3 cups apple cider (720 ml)
- 1.5 cups pomegranate juice (360 ml)
- 0.5 cup fresh lemon juice (120 ml)
- 3 tablespoons maple syrup (45 ml)
- 0.25 teaspoon edible gold shimmer dust
- 2 cups plain sparkling water, chilled (480 ml)
How to make it
Shake the cider, pomegranate juice, lemon juice, maple syrup and shimmer with ice for 10 seconds.
Strain into a chilled coupe and top with the sparkling water. Give the glass a gentle swirl to wake the shimmer up.
Stir everything except the sparkling water together and chill. Stir again just before pouring, because the shimmer settles, and top each glass with sparkling water.
Glass: Coupe. Garnish: A paper-thin slice of red apple floated on top.
Chef's secrets
Buy shimmer that says 'edible' on the label; 'non-toxic' decorating dust is a different product.

Good to know
The pitcher base keeps for two days in the fridge. Stir before every pour and add the sparkling water in the glass.
