Mint Tea Lemonade

Half tea, half lemonade is the oldest 'both people are happy' drink there is, and fresh mint makes it more than a bottle. The spirit goes in the jug if you want it, or on the side for guests to add themselves. It is a game-night drink you can sip for hours.

What you'll need

  • 4 cups boiling water (960 ml)
  • 6 black tea bags
  • 1 large bunch fresh mint
  • 1 cup fresh lemon juice (240 ml)
  • 0.75 cup sugar
  • 2.5 cups cold water (600 ml)
  • 1.5 cups bourbon or vodka, optional (360 ml)

How to make it

  1. Steep the tea bags and mint in the boiling water for 6 minutes, then strain and cool.

  2. Stir the sugar into the lemon juice and water until dissolved.

  3. Mix the tea and lemonade in a pitcher, add the bourbon if using, and chill. Pour over ice.

  4. Glass: Tall glasses. Garnish: A mint sprig and a lemon wheel.

Chef's secrets

Don't steep the tea longer than 6 minutes or it turns bitter.
