Orange Velvet Hot Chocolate

Made with a chopped bar instead of a powder, hot chocolate becomes silky and bitter-sweet, and orange zest makes it taste like a dessert you would order. Serve it plain, or add a spoonful of orange liqueur for a nightcap.

What you'll need

  • 2 cups whole milk (480 ml)
  • 3 oz dark chocolate, 60-70%, finely chopped (85 g)
  • 1 tbsp sugar
  • 2 wide strips of orange zest
  • 1 pinch salt
  • 2 tbsp orange liqueur, optional (30 ml)
  • whipped cream

How to make it

  1. Heat the milk with the sugar, orange zest and salt until steaming, not boiling.

  2. Remove from heat, take out the zest, and whisk in the chocolate until smooth.

  3. Stir in the liqueur if using. Pour into mugs and top with whipped cream.

  4. Glass: Two warm mugs. Garnish: Whipped cream and a curl of orange zest.

Chef's secrets

Do not let the milk boil or it will scorch.
