Raspberry Truffle Martini

This is for the end of the night: a drink that tastes like the chocolates you forgot to buy. The cream makes it silky, and shaking it very hard gives a fine foam. Serve it after dinner in place of dessert, or alongside it.

What you'll need

  • 3 oz vodka (90 ml)
  • 2 oz chocolate liqueur (60 ml)
  • 1 oz raspberry liqueur (30 ml)
  • 1 oz heavy cream (30 ml)
  • raspberries on a pick, cocoa for the rim

How to make it

  1. Chill two martini glasses. If you like a rim, moisten it with a little liqueur and dip it in cocoa.

  2. Shake all the liquids hard with lots of ice for 15 seconds.

  3. Strain into the glasses and add the raspberries.

  4. Glass: Two chilled martini glasses. Garnish: Two raspberries on a cocktail pick, and a little cocoa on the rim if you like.

Chef's secrets

Use real chilled cream, not milk.

Shake longer than feels necessary; the dilution is what makes it smooth.
