Blueberry Cottage Cheese Breakfast Bake
Oats, eggs and cottage cheese baked with blueberries into soft squares, like a warm blueberry oatmeal bar.
What you'll need
- 1 cup cottage cheese
- 3 large eggs
- 1 cup old-fashioned rolled oats
- 0.25 cup milk
- 3 tablespoons maple syrup
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 0.5 teaspoon ground cinnamon
- A pinch of salt
- 1 cup blueberries, fresh or frozen (do not thaw)
- Butter or cooking spray, for the pan
How to make it
Heat the oven to 350 degrees F and grease an 8-by-8-inch baking dish.
Whisk the eggs in a bowl, then stir in the cottage cheese, oats, milk, maple syrup, baking powder, vanilla, cinnamon and salt. Fold in the blueberries.
Pour it into the dish, spread it even and bake 30 to 35 minutes, until golden at the edges and set in the middle (a knife in the center comes out clean).
Let it cool 10 minutes before cutting into 9 squares. Drizzle with a little maple syrup if you like.
Chef's secrets
Frozen blueberries go in straight from the freezer so they do not turn the whole pan purple.
Good to know
Refrigerate leftovers within 2 hours and eat within 3 to 4 days. Warm a square in the microwave for about 30 seconds.
