Earl Grey Lemon Fizz

Strong tea has the same dry, tannic backbone as a cocktail, and bergamot gives it a perfume. This is the alcohol-free drink for the host who does not want her non-drinking guests to feel left out. Make a jug of the base and add the fizz at the table.

  4. Glass: Tall glass. Garnish: A lemon wheel and a thyme sprig.

Chef's secrets

A long steep makes a strong base, which is what stands up to the ice.

Swap half the honey for a vanilla syrup for a London Fog feel.
