Sherry Tonic

In southern Spain, sherry and tonic is a long, low-alcohol way to start dinner, and it has become one of the quiet favourites of the past few years. It is dry and a little salty, and it goes with almost any first course. Everything is poured straight into the glass.

  • 2 cups tonic water, chilled (480 ml)
  • 4 orange slices
  • mint sprigs and ice

How to make it

  1. Fill four wine glasses with ice and add an orange slice to each.

  2. Add 1/4 cup sherry to each glass.

  3. Top with 1/2 cup tonic and stir once. Add the mint.

  4. Glass: Wine glasses. Garnish: An orange slice and a mint sprig.

Chef's secrets

Use fino or manzanilla; sweeter sherries make it syrupy.

Keep opened sherry in the fridge, where it lasts a few weeks.
