Maple Porch Old Fashioned
The old fashioned is the drink people who do not usually order cocktails will accept, and swapping the sugar cube for maple syrup is all it needs to taste like November. Stir it longer than you think you should. The extra dilution is what makes it smooth rather than harsh.
What you'll need
- 2 oz bourbon (60 ml)
- 1 tsp pure maple syrup (5 ml)
- 2 dashes aromatic bitters
- 1 dash orange bitters
- 1 wide strip of orange peel
- 1 large ice cube
- 2 cups bourbon (480 ml)
- 3 tablespoons pure maple syrup (45 ml)
- 1 tablespoon aromatic bitters (15 ml)
- 2 teaspoons orange bitters (10 ml)
- 0.5 cup cold water (120 ml)
How to make it
Put the bourbon, maple and both bitters in a mixing glass with plenty of ice. Stir about 30 seconds, until the outside of the glass is very cold.
Strain over a large cube in a rocks glass.
Squeeze the orange peel over the drink, skin side down, so the oils spray across the top, then drop it in.
Glass: Rocks glass. Garnish: A wide orange peel, expressed over the glass and dropped in.
Chef's secrets
Use a clear large cube if you can; it melts slowly and keeps the drink from watering down.
Real maple syrup, never pancake syrup.
Good to know
Mix the batch of 8 with the water, bottle it, and keep it in the fridge up to a week. Pour 3 ounces over a cube per guest.
