Orange Peel Negroni

The negroni is the easiest classic to make well because it asks only for equal parts and patience. It is bitter, sweet and boozy all at once, and it suits a small table where everyone is staying a while. Make it for four in a jug and pour it over cubes.

What you'll need

  • 0.5 cup gin (120 ml)
  • 0.5 cup bitter red aperitif, such as Campari (120 ml)
  • 0.5 cup sweet vermouth (120 ml)
  • 3 tbsp cold water (45 ml)
  • 4 wide orange peels
  • 4 large ice cubes

How to make it

  1. Combine the gin, aperitif, vermouth and water in a jug filled with ice and stir for 30 seconds.

  2. Strain over a large cube in each rocks glass.

  3. Squeeze an orange peel over each drink and drop it in.

  4. Glass: Rocks glasses. Garnish: A wide orange peel, expressed and dropped in.

Chef's secrets

Keep the sweet vermouth in the fridge once opened; it spoils like wine.

A large cube is worth the trouble; small ice dilutes it.
