Scarlet Rim Martini

The simplest of the red drinks and the one that photographs best. Three pours, a squeeze of lemon, and a rim of red sugar that catches the candlelight. It is fruity without being sticky, as long as you use a cranberry juice that is not too sweet.

What you'll need

  • 2 tablespoons red sanding sugar
  • 1 lemon wedge
  • 1.5 oz vodka (45 ml)
  • 0.75 oz raspberry liqueur (22 ml)

  • 1.5 cups cranberry juice (360 ml)
  • 0.25 cup fresh lemon juice (60 ml)
  • 0.75 cup cold water (180 ml)

How to make it

  1. Spread the sugar on a small plate. Run the lemon wedge around the rim of a coupe or martini glass and dip it in the sugar.

  2. Shake the vodka, raspberry liqueur, cranberry juice and lemon juice with ice for 12 seconds.

  3. Strain into the rimmed glass.

  4. Stir everything together, including the water, and chill for at least 2 hours. Pour straight into rimmed glasses.

  5. Glass: Coupe or martini glass. Garnish: Two raspberries on a pick.

Chef's secrets

Chill the glasses in the freezer for 15 minutes so the drink stays cold without ice.

Black sanding sugar on the rim gives a more dramatic look.
