Tri-Color Harvest Jellies
These take an afternoon, most of it waiting. Each layer has to set before the next goes on, and that patience is what gives you three clean stripes. The white layer, made with sweetened condensed milk, is the one people ask about.
What you'll need
- 1 box lemon gelatin dessert mix, 3 oz (85 g)
- 1 cup boiling water (240 ml)
- 0.5 cup cold water (120 ml)
- 0.5 cup vodka, chilled (120 ml)
- 1 box orange gelatin dessert mix, 3 oz (85 g)
- 1 cup boiling water (240 ml)
- 0.5 cup cold water (120 ml)
- 0.5 cup vodka, chilled (120 ml)
- 2 envelopes unflavored gelatin, 1/4 oz (7 g) each
- 0.5 cup cold water (120 ml)
- 0.5 cup boiling water (120 ml)
- 0.5 cup sweetened condensed milk (120 ml)
- 0.5 cup vodka, chilled (120 ml)
How to make it
Arrange 24 small clear cups, 2 oz (60 ml) each, on a tray that fits in your fridge.
Stir the lemon gelatin into the boiling water for 2 minutes, until fully dissolved. Stir in the cold water and vodka. Pour about 4 teaspoons (20 ml) into each cup. Chill until set but still slightly tacky, 45 to 60 minutes.
Make the orange layer the same way and let it cool to room temperature. Pour gently over the yellow and chill for 45 to 60 minutes.
Sprinkle the unflavored gelatin over the cold water and leave for 5 minutes. Add the boiling water and stir until dissolved. Whisk in the condensed milk and vodka. Cool to room temperature, pour over the orange and chill until firm, at least 1 hour.
Glass: Small clear plastic or glass shot cups. Garnish: A small swirl of whipped cream on each, added just before serving.
Chef's secrets
Always let the next layer cool before pouring; warm liquid melts the layer underneath and the stripes blur.
Pour over the back of a spoon to keep the surface smooth.
Total time is about 4 hours, nearly all of it chilling.
Good to know
They keep, covered, in the fridge for three days. Make them the day before.
