Amber Aperitivo Spritz
Nothing gets a dinner party started like an orange spritz in the hand. The classic ratio is three parts prosecco, two parts bitter-orange aperitivo and one part soda, and it scales cleanly. Pour the first round yourself, then leave the pitcher out.
about 1.6 L; 8 glassesYield
EasyDifficulty
What you'll need
- 1 bottle dry prosecco, chilled (750 ml)
- 2 cups bitter-orange aperitivo, such as Aperol (480 ml)
- 1 cup club soda or sparkling water, chilled (240 ml)
- 2 oranges, sliced
- ice
How to make it
Fill wine glasses with ice and an orange slice each.
Add a little under 1/4 cup of the aperitivo to each, then about 3/4 cup prosecco, in that order.
Add a splash of soda and stir once, gently.
Glass: Wine glass over ice. Garnish: A thick half-wheel of orange.
Chef's secrets
Chill everything first; warm bottles make a flat spritz.
Use a dry (brut) prosecco; the aperitivo is sweet.
Good to know
Make ahead
Mix the aperitivo with the soda ahead if you like. Prosecco only goes in at the last minute.
