Apricot Honey Bubbles
Think of a bellini with fewer fuss and a touch of honey. Apricot nectar has the same sunny taste all year, and the honey rounds it out. Serve it with prosecco for the toast, or with sparkling water for anyone who does not drink.

- 1 tbsp fresh lemon juice (15 ml)
- 1 cup dry prosecco, or sparkling water (240 ml)
- thin apricot slices
How to make it

Chef's secrets
Warm the honey for 5 seconds so it dissolves.
