Matcha Lemonade

Matcha has the grassy brightness that lemonade has been missing, and it turns the drink a soft, cheerful green. Whisk it into a paste with a little hot water first, or it clumps. It has a little caffeine, so it is a drink for the afternoon.

Chef's secrets

Use culinary matcha, not ceremonial; it is cheaper and works fine here.

A pinch of salt softens the bitterness.
