Pear and Sage Sparkle

Pear is soft and a little shy, and sage gives it a savoury backbone, which is exactly what you want next to roast turkey. This is the alcohol-free drink for the person who does not want to be handed a juice box. It is also one of the few drinks that tastes better with a pinch of salt.

Chef's secrets

Taste the nectar first; some brands are much sweeter than others, so cut the syrup to suit.

Clap the sage leaf in your hands before you drop it in.

Make ahead

The syrup keeps for five days in the fridge. For a crowd, mix the non-fizzy parts in a pitcher and top each glass.
