White Peach Thyme Fizz
Ripe white peaches make a purée that tastes like the whole summer. The thyme honey brings a savoury note that keeps it from being cloying. Frozen peaches work in any month, and the fizz can be wine or water, depending on the guest.
What you'll need
- 3 tbsp honey
- 3 tbsp water (45 ml)
- 3 thyme sprigs
- 4 ripe white or yellow peaches, peeled and chopped, or 3 cups thawed frozen peaches
- 2 tbsp fresh lemon juice (30 ml)
- 3 tbsp thyme honey
- 1 bottle dry prosecco, or 3 cups sparkling water for the alcohol-free pitcher (750 ml)
How to make it
Warm the honey, water and thyme gently for 2 minutes, steep 10 minutes and strain.
Blend the peaches with the lemon juice and 3 tablespoons of the thyme honey until smooth. Chill.
Put about 1/4 cup of the purée in each flute and slowly top with prosecco or sparkling water. Stir once.
Glass: Champagne flute. Garnish: A thin peach slice and a thyme sprig.
Chef's secrets
Taste the purée: the fruit decides how much honey it needs.
Strain the purée if you want it silky.
Good to know
The purée keeps for a day in the fridge; add a squeeze of lemon if it browns.
