Ghost-Light Fizz
Tonic water glows under ultraviolet light, and that is the entire secret. In ordinary light this is a crisp, slightly bitter lemon cooler. Put it near a black-light lamp and the whole pitcher lights up. It only works under that kind of lamp, so set one up where the drinks are.
What you'll need
- 0.5 cup sugar (100 g)
- 0.5 cup hot water (120 ml)
- 0.75 cup fresh lemon juice, about 4 lemons (180 ml)
- 4 cups tonic water, well chilled (960 ml)
- 1.5 oz gin (45 ml)
How to make it
Stir the sugar into the hot water until dissolved. Add the lemon juice and chill.
Just before serving, pour the lemon base into a clear pitcher and add the tonic water. Stir once.
Pour over ice in clear glasses and set them within a few feet of a black-light lamp.
Glass: Clear pitcher and tall clear glasses. Garnish: A lemon wheel. Clear ice shows the glow best.
Chef's secrets
Tonic is bitter; taste and add a little more sugar syrup for younger guests.
The more tonic in the glass, the stronger the glow, so do not water it down with much ice melt.
Good to know
The lemon base keeps for three days in the fridge. Add tonic at the last minute so it stays fizzy.
