Watchful Eyes Punch
Silly rather than scary, and children love being the one who gets an eye in their cup. The punch underneath is a proper drink in its own right: tart, not too sweet, with the perfume of lychee from a splash of the syrup in the can.
What you'll need
- 1 can lychees in syrup, 20 oz (565 g), drained and syrup saved
- 20 blueberries, one for each lychee
- 4 cups cranberry juice, chilled (960 ml)
- 2 cups white grape juice, chilled (480 ml)
- 0.5 cup syrup saved from the lychee can (120 ml)
- 0.33 cup fresh lime juice (80 ml)
- 4 cups plain sparkling water, chilled (960 ml)
How to make it
Pat the lychees dry and press a blueberry into the hollow of each one. Set them on a tray and freeze for 1 hour.
Stir the cranberry juice, white grape juice, lychee syrup and lime juice together in a punch bowl.
Add the sparkling water, then the frozen eyes. Ladle one into each cup as you serve.
Glass: Punch bowl; clear cups so the eyes show. Garnish: One lychee eye in every cup.
Chef's secrets
The eyes bob near the surface while they are frozen and settle as they thaw, so add them in two batches at a long party.
If the blueberries are small, use two per lychee.
Good to know
The eyes can be frozen up to a week ahead in a covered container. Mix the juices a day ahead; add the sparkling water at serving time.
