Little Pumpkin Sippers
A tray of these before trick-or-treating puts something real in small stomachs. Frozen banana makes it thick and sweet, the pumpkin and spice make it taste like pie, and the small glasses make it feel like a treat rather than a smoothie.
What you'll need
- 1 ripe banana, sliced and frozen (about 120 g)
- 0.5 cup pumpkin purée (120 g)
- 0.5 cup vanilla yogurt (120 g)
- 1 cup milk (240 ml)
- 1 tablespoon maple syrup (15 ml)
- 0.5 teaspoon pumpkin pie spice
- 4 ice cubes
- whipped cream and ground cinnamon, to top
How to make it
Put the milk and yogurt in the blender first, then everything else. Blend until completely smooth, about 1 minute.
Divide among 6 small glasses.
Add a little whipped cream and a pinch of cinnamon to each.
Glass: Small juice glasses or 4 oz jars. Garnish: Whipped cream and a pinch of cinnamon.
Chef's secrets
Use plain pumpkin purée, not pie filling, which is already sweetened and spiced.
Double it for full-size breakfast smoothies the next morning.
Good to know
Blend up to 4 hours ahead and keep in the fridge; shake or stir before pouring. Freeze the banana the night before.
